
Summertime is the best time to get great, locally sourced produce in Ontario. During the summer months I love checking out local farmer's markets and one of my favourite ones to go to is the Saturday market at Evergreen Brickworks. Several vendors from across Ontario participate in the weekly market, selling everything for seasonal fruits and vegetables to organic meats and locally made mustards.
My recent trip to the farmer's market at Evergreen Brickworks inspired me to make this pasta dish using seasonal ingredients such as Swiss chard and garlic scapes.

Ingredients
1/2 tbsp of olive oil
375g of ground Italian sausage
1 onion, diced
2 cups of Swiss chard, stems removed and chopped (it looks like a lot but the Swiss chard will cook down)
255g cherry tomatoes
8 garlic scapes, sliced
1 cup of grated parmesan cheese, plus 1/4 cup to sprinkle over cooked pasta
salt and pepper to taste
Instructions
Cook pasta following directions on the box
Heat olive oil and cook sausage until brown
Add onion and cook until softened
Add Swiss chard and cherry tomatoes and cook until chard is wilted and tomato skins are blistered
Add garlic scapes and cook until slighted softened (about a minute)
Toss in cooked pasta, parmesan cheese, one ladle (about 1/4 cup) of pasta water, salt and pepper
Top with remaining parmesan cheese
