Mason Jar Slaw with Chicken and Sesame-Ginger Vinaigrette


Slaw with chicken and sesame-ginger vinaigrette in a mason jar

I'm always looking for healthy, portable lunches to bring to work. After doing a bit of digging online (mainly on Pinterest) I discovered mason jar salads. This slaw is my spin on the layered salad technique. Not only does this salad look pretty but it's packed with flavour. The vinaigrettes and dressings always go on the bottom, followed by the tomatoes, cucumber, broccoli slaw and chicken on the top. I like my vinaigrettes on the acidic side but if you find it too sour just add a bit more sesame oil to it.

Ingredients

  • Grape tomatoes (about 1/2 a pint)

  • 1/3 of an English cucumber, thinly sliced

  • Broccoli slaw mix

  • Shredded chicken (skin removed)

For the vinaigrette:

  • 1/2 cup of rice wine vinegar

  • 1/2 tbsp sesame oil

  • 1 tbsp honey

  • 1 1/2 inch piece of freshly grated ginger

  • Salt and pepper to taste

Instructions

  1. Whisk vinegar, oil, honey, ginger, salt and pepper together

  2. Pour vinaigrette into the bottom of a 1 litre mason jar

  3. Add grape tomatoes into mason jar

  4. Add broccoli slaw mix into mason jar

  5. Add chicken into mason jar

  6. Close mason jar and refrigerate for 3-4 hours or overnight

  7. Pour into a bowl when you're ready to eat
