Cheesy Meatball Bombs

I'll be honest, I'm not a huge sports fan and I'm especially not a football fan. What I am a fan of is Game Day food. It's spicy, salty and usually greasy and goes well with booze.

Rather than going to a packed sports bar during the Super Bowl I usually make my own pub-style food at home. Here's my recipe for Cheesy Meatball Bombs (think sausage rolls but better). I cut down the prep time by using pre-rolled Italian-style meatballs and Pillsbury biscuit dough. The are the perfect addition to any Super Bowl spread.

Ingredients

  • 20 meatballs (I used Marc Angelo uncooked pre-made Italian pork meatballs)

  • 2 cans of biscuit dough

  • 1/2 cup of grated mozzarella cheese

  • 1 egg

  • 2 tbsp. milk

  • 1 cup of marinara sauce

Instructions

  1. Follow baking directions for meatballs and let cool

  2. Preheat oven to 375F

  3. Flatten each round of dough

  4. Put 1/2 tbsp of mozzarella cheese and a meatball in the centre of each piece of dough

  5. Stretch and form the dough around the meatball, making sure to pinch the dough closed

  6. Whisk the egg and milk together and brush the egg wash on top of each ball

  7. Bake 18-20 minutes until golden brown

  8. Serve hot with marinara sauce for dipping
