Loaded Potato Salad

This potato salad has been my signature dish for years and a recipe that I developed myself. The first time I made it was about 7 or 8 years ago for Sean's birthday. Since then, my family has gotten wind of this salad and have asked me to make it for everything from family barbecues to Christmas dinner. It's the perfect Father's Day side dish.

Loaded Potato Salad

Ingredients

  • 10-12 medium or large boiled red potatoes, skins on and diced

  • 4 large hard boiled eggs, diced

  • 500g bacon, cut into pieces and fried

  • 1 1/2 cups of mayonnaise

  • 250g of old cheddar cheese, cut into small cubes

  • 4 green onions, sliced

  • Salt and pepper to taste

Instructions

  1. Combine potatoes, eggs, bacon and mayonnaise

  2. Add cheese, green onions, salt and pepper

  3. Refrigerate for at least 4-6 hours (preferably overnight)
