If there is one dish I like but refuse to pay for at a restaurant it's avocado toast. Why would I (or anyone) spend $10 or $15 on mashed up avocado on bread when you can make it at home for only a couple of bucks? This millennial brunch staple is the perfect addition to any Mother's Day brunch.
Here are 4 variations:
Ingredients
For the avocado toast
3 avocados, mashed
1/2 lime, juiced
salt
pepper
4 slices of rye bread, toasted
With smoked salmon topping
2 slices of smoked salmon
With fried egg topping
1 large egg
1 clove of garlic
1 tsp. canola oil
salt
pepper
A small handful of microgreens
With roasted tomato topping
About 8-10 grape or cherry tomatoes
1/2 tbsp. olive oil
salt
pepper
A small handful of microgreens
Instructions
For the avocado toast
Toast slices of bread
Mash avocados (I like to leave them a little chunky)
Squeeze lime juice
Season with salt and pepper
Top toasted bread with avocado mixture
With smoked salmon topping
Top toasted bread with avocado mixture
Add 2 slices of smoked salmon to toast
With fried egg topping
Fry egg, leaving yolk runny (about 2-3 minutes)
Rub toast with a raw clove of garlic
Top with avocado mixture
Add fried egg
Top with microgreens
With roasted tomato topping
Preheat oven to 375 degrees
Drizzle tomatoes with olive oil and salt and pepper
Roast for 15 minutes
