Slow Cooker Beef Stew


I love using my slow cooker, especially in the winter months when all I want is cozy comfort food. This beef stew recipe is the perfect meal to make on a chilly Sunday.

Ingredients

  • 1 kg of stewing beef

  • 3 cups of beef stock

  • 1 tbsp worcestershire sauce

  • 2 large onions cut in large chunks

  • 1 cup of sliced mushrooms

  • 500g of small potatoes

  • 3 carrots cut in 1/2 inch rounds

  • 1/2 of flour

  • 1/2 tbsp of paprika

  • 28 oz can of diced tomatoes

  • 3 tbsp of tomato paste

  • 4 bay leaves

  • 1 cup of frozen peas

  • 2 tbsp of vegetable oil

  • Salt & pepper to taste

Instructions

  1. Coat beef in flour, paprika, salt and pepper

  2. Brown meat in batches using about 1/2 tbsp of oil at a time

  3. Transfer browned meat, tomatoes, onions, mushrooms, potatoes, carrots and bay leaves into slow cooker

  4. Deglaze pan with beef stock, worcestershire sauce, tomato paste, salt and pepper

  5. Pour liquid into slow cooker and stir

  6. Cook on low for 7-8 hours

  7. Pour peas into slow cooker and set on high for 15 minutes
