Lentil Soup

As the temperature starts to drop, nothing is more comforting to me than a hot bowl of soup. This lentil soup is comforting without being too heavy. The addition of heat from the cayenne pepper adds a subtle spiciness to the dish.

Lentil Soup

Ingredients

  • 11 cups of low-sodium vegetable stock

  • 2 cups of dried lentils rinsed and drained

  • 3 onions diced

  • 3 carrots diced

  • 3 celery stalks diced

  • 3 cloves of garlic minced

  • 2 tsp olive oil

  • 1/2 tsp cayenne pepper

  • 4 bay leaves

  • 2 tsp cumin

  • salt and pepper to taste

Instructions

  1. In a large pot, sautee onions, carrots, celery and garlic with olive oil over medium heat until onions are softened (3-4 minutes)

  2. Add cayenne pepper, cumin, bay leaves

  3. Add lentils

  4. Pour in vegetable stock

  5. Add salt and pepper

  6. Simmer on medium-low heat for 45 minutes
