As the temperature starts to drop, nothing is more comforting to me than a hot bowl of soup. This lentil soup is comforting without being too heavy. The addition of heat from the cayenne pepper adds a subtle spiciness to the dish.

Ingredients
11 cups of low-sodium vegetable stock
2 cups of dried lentils rinsed and drained
3 onions diced
3 carrots diced
3 celery stalks diced
3 cloves of garlic minced
2 tsp olive oil
1/2 tsp cayenne pepper
4 bay leaves
2 tsp cumin
salt and pepper to taste
Instructions
In a large pot, sautee onions, carrots, celery and garlic with olive oil over medium heat until onions are softened (3-4 minutes)
Add cayenne pepper, cumin, bay leaves
Add lentils
Pour in vegetable stock
Add salt and pepper
Simmer on medium-low heat for 45 minutes
